We’ve all heard the importance of having breakfast every morning, but having a delicious, healthy breakfast for Better Breakfast Month, too? That might seem impractical or time-consuming for the lot of us who set the alarm an hour before our departure time but roll out of bed 15 minutes before that. But a little effort and time into putting something together at the beginning of the day can do wonders for your body and mind– not just for the rest of the day, but for days and weeks to come. Think about this:

  • Those who had breakfast show tend to have better short term memory and an easier time concentrating.
  • Eating breakfast also kickstarts your metabolism for the day because you’re giving your body what it needs rather than letting it dig into its reserves.
  • Having breakfast can help you keep your weight in check in the long run because you avoid morning munchies and the need to just grab anything to eat.
  • You’re in a better mood when you’re not hungry. Duh.

While you might not be able to roll out cooked eggs with brussels sprout hash like a pro (though you’ll know how by the end of this article), just feeding yourself something wholesome and healthy (sorry, Lucky Charms) can do wonders for your health. Staring at a bowl of cereal might not be enough to get your attention, so here’s a few fun and quirky breakfast ideas to start off the day with a smile!

Smoky Gruyere cheese mixes with eggs, parsley, red bell pepper, and turkey sausage. All the ingredients are popped in the oven and come out with crusty perfection (an oxymoron, yes?).

2. Chard and Chorizo Fritatta

Chard and Chorizo Frittata

Similar to the above breakfast recipe, Chard and Chorizo Frittata cooks in an oven but with more of a spicy kick. The Spanish chorizo offers a bit more heat while it cooks with eggs, chard, hash browns, and Parmesan cheese. Don’t forget your cast iron skillet for this one!

3. Brussels Sprout and Potato Hash

Another personal favorite! Brussels Sprout and Potato Hash might not sound so appetizing when you recall memories of having to be force-fed brussels sprouts. But their nuttiness along with frozen hash browns and a little onion and spices creates a hash that’s more complex than the few ingredients might suggest. Top with an egg cooked in simmering water to help keep calories in check!

Whether you choose to have a big healthy breakfast or just peanut butter on toast that’s stamped with an Eiffel Tower, Better Breakfast Month reminds us all that how we start our day is a good indicator of how the rest of our day will play out.
